Mini Cheesecake Cupcake

~Recipe makes 12 survings.

~Prep: 25 mins. Cook: 15 mins

Ingredients

~12 vanilla wafers

~2 tbls Lemon juice

~16 ounce Cream cheese

~2 eggs

~2/3 cup of sugar

~1 (21 ounce) can cherry pie filling

Directions

~Preheat oven to 350 degrees

~Line cupcake tin with 12 paper baking cups. Put a vanilla wafer in each 1.

~Mix all ingredients listed above in a large bowl.

~Fill each cup 2/3 ways full.

~Bake for 15 mis. 

~You can add toppings such as fruit pie filling or whipped cream.
